  • 1 can (15 oz / 425 g) black beans, rinsed and drained
  • 1 can (15 oz / 425 g) whole kernel corn, drained
  • 1 cup cherry tomatoes, quartered
  • 1 small red bell pepper, diced
  • 1/2 cup finely chopped red onion
  • 1 avocado, diced
  • 1/4 cup chopped fresh cilantro
  • Juice of 2 fresh limes (about 1/4 cup / 60 ml)
  • 1/4 cup olive oil (extra virgin)
  • 1 garlic clove, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon honey or agave syrup

Instructions

  1. Rinse and drain the black beans and corn well. Chop cherry tomatoes into quarters, dice red bell pepper, finely chop the red onion, and roughly chop the cilantro. Dice the avocado last to prevent browning.
  2. In a small bowl or jar, combine fresh lime juice, olive oil, minced garlic, ground cumin, chili powder if using, honey, salt, and pepper. Whisk or shake vigorously until the dressing is well emulsified and slightly thickened.
  3. In a large bowl, add the black beans, corn, tomatoes, bell pepper, onion, and cilantro. Pour the dressing over and toss gently to coat everything evenly. Add the diced avocado last and fold it in carefully to avoid mashing.
  4. Taste and add extra salt, pepper, or lime juice if needed.
  5. Chill for at least 30 minutes to let flavors marry before serving. If in a hurry, serve fresh.

Add avocado last to prevent browning and mushy texture. Use fresh lime juice for best flavor. Chill for at least 30 minutes for flavors to meld. Dressing can be made ahead and stored separately. For vegan option, substitute honey with maple syrup.
