  • 12 sweet Hawaiian rolls (e.g., King’s Hawaiian)
  • Salt and pepper to taste
  • 12 thin slices American or cheddar cheese
  • 2 tablespoons softened butter
  • Yellow mustard, to taste
  • Ketchup, to taste
  • Dill pickle slices (optional)
  • Thinly sliced onion (optional)

Instructions

  1. Preheat your cast-iron skillet or heavy pan over medium-high heat for about 5 minutes until very hot.
  2. Divide the ground beef into 12 equal balls, about 2 ounces each, handling gently to keep texture tender.
  3. Spread softened butter on the cut sides of the Hawaiian rolls. Toast them butter-side down on another pan or griddle over medium heat until golden brown, about 2 minutes.
  4. Place 3-4 beef balls in the hot skillet, leaving space between them. Using a sturdy spatula, press each ball down firmly until about 1/4 inch thick. Hold pressure for 10 seconds to form a crispy crust.
  5. Immediately season the patties with salt and pepper.
  6. Cook the patties without moving for 2-3 minutes until edges are brown and crispy.
  7. Flip each patty carefully. Place a slice of cheese on top and cook for another 1-2 minutes until cheese melts.
  8. Assemble sliders by placing the cheese-topped patty on the toasted bottom half of each roll. Add mustard, ketchup, pickles, and onions as desired. Top with the other half of the roll.
  9. Serve immediately or keep warm in a 200°F (93°C) oven for up to 15 minutes.

Notes

If patties stick, add a tiny bit of oil to the skillet before cooking the next batch. Avoid pressing patties again after the initial smash to keep juices locked in. Toast rolls to prevent sogginess. For dairy-free, use vegan cheese and plant-based butter. For gluten-free, substitute rolls with gluten-free buns or lettuce wraps.
