These moist vanilla cake pops with creamy frosting and patriotic sprinkles are a quick and easy festive treat perfect for July 4th celebrations. They are bite-sized, crowd-pleasing, and fun to make.

Ingredients

  • 1 box vanilla cake mix (about 15.25 oz / 432 g)
  • 3 large eggs, room temperature
  • 1/2 cup vegetable oil (120 ml)
  • 1 cup water (240 ml), room temperature
  • 1 cup vanilla frosting (240 g), store-bought or homemade
  • 12 oz white candy melts (340 g)
  • About 1/2 cup patriotic sprinkles (75 g) – red, white, and blue mix
  • 2025 lollipop sticks

Instructions

  1. Preheat oven to 350°F (175°C). Mix vanilla cake batter according to package instructions using 3 large eggs, 1/2 cup vegetable oil, and 1 cup water.
  2. Pour batter into a greased 9×13-inch (23×33 cm) baking pan and bake for 30-35 minutes or until a toothpick comes out clean.
  3. Cool cake completely on a wire rack (about 1 hour).
  4. Crumble cooled cake into a large mixing bowl using hands or a fork until fine crumbs form but not powdery.
  5. Add 1 cup vanilla frosting to the crumbled cake and stir gently until mixture sticks together when pressed. Adjust with more crumbs or frosting if needed.
  6. Scoop about 2 tablespoons (30 g) of mixture and roll into balls. Place on parchment-lined baking sheet and chill in refrigerator for 30 minutes.
  7. Melt white candy melts in microwave-safe bowl in 30-second intervals, stirring between each until smooth.
  8. Dip tip of each lollipop stick into melted candy, then insert halfway into each cake ball. Return to fridge for 10-15 minutes to set.
  9. Holding the stick, dip each cake pop into melted candy, tap off excess coating gently, and immediately sprinkle with patriotic sprinkles.
  10. Place cake pops upright in styrofoam block or stand to dry completely (about 30 minutes).
  11. Add a second coat or more sprinkles if desired after first layer sets. Let dry fully before serving or packaging.

Notes

Chill cake balls after shaping and after inserting sticks to maintain shape and prevent crumbling. Melt candy melts in short bursts to avoid overheating. Tap off excess coating for smooth finish. Work quickly when adding sprinkles as coating sets fast. If no cake pop stand, use styrofoam or cardboard with holes.
