  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup Pop Rocks candy (classic raspberry or watermelon flavor)

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your mini muffin tin or line with parchment paper.
  2. Melt the butter in a microwave-safe bowl in 30-second bursts until fully melted, about 1 minute total. Let it cool slightly.
  3. In a mixing bowl, whisk together melted butter, granulated sugar, eggs, and vanilla extract until smooth and glossy, about 2-3 minutes.
  4. In a separate bowl, sift together flour, cocoa powder, salt, and baking powder.
  5. Gently fold the dry ingredients into the wet mixture using a spatula until just combined.
  6. Spoon about 1 tablespoon (15g) of batter into each mini muffin cup. Sprinkle roughly 1/2 teaspoon of Pop Rocks candy into the center of each batter dollop, then cover with a little more batter to seal the candy inside.
  7. Bake for 12-15 minutes until edges are firm but centers remain soft. A toothpick inserted near the edge should come out with a few moist crumbs.
  8. Let the bites cool in the tin for 10 minutes before transferring to a wire rack.
  9. Once cooled, dust with powdered sugar or add festive sprinkles if desired. Serve at room temperature for the best popping effect.
