  • 4 cups (600 g) fresh strawberries, hulled and sliced
  • 1 cup (150 g) fresh blueberries
  • 2 tablespoons granulated sugar (optional)
  • 1 teaspoon lemon juice
  • 2 cups (480 ml) heavy whipping cream, cold
  • 3 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Prepare the berries: In a medium bowl, combine sliced strawberries, blueberries, granulated sugar, and lemon juice. Gently toss to coat. Let the mixture sit for 15–20 minutes to macerate.
  2. Cube the pound cake: Cut pound cake into roughly 1-inch cubes. Set aside.
  3. Whip the cream: In a chilled mixing bowl, pour the cold heavy cream. Using an electric mixer or whisk, beat on medium-high speed until soft peaks form (about 3–4 minutes). Add powdered sugar and vanilla extract, then whip until stiff peaks form.
  4. Assemble the trifle: In a trifle bowl, layer one-third of the pound cake cubes evenly at the bottom. Spoon half of the macerated berries and their juices over the cake. Spread one-third of the whipped cream on top, smoothing gently.
  5. Repeat layers: Add another layer of pound cake cubes, followed by the remaining berries, then another layer of whipped cream. Reserve a small amount of whipped cream and some whole berries for garnish.
  6. Chill: Cover the trifle with plastic wrap and refrigerate for at least 2 hours before serving.
  7. Garnish and serve: Just before serving, top with the reserved whipped cream and fresh whole berries.

Notes

Use room temperature berries to help release juices naturally. Chill cream and bowl before whipping for best results. Use pound cake for better soaking texture; angel food cake is a lighter alternative. Macerate fruit to add natural syrup. Whip cream carefully to avoid turning it into butter. The trifle can be made a day ahead and stored covered in the refrigerator.
