  • 1/2 cup (about 75 g) fresh blackberries (frozen works too)
  • 3/4 oz (22 ml) freshly squeezed lemon juice (about half a lemon)
  • 1/2 oz (15 ml) simple syrup (homemade or store-bought, adjust to taste)
  • 3 oz (90 ml) soda water or club soda (chilled)
  • Fresh blackberries (3-4 for garnish)
  • Lemon twist or wedge for garnish
  • Optional: A sprig of fresh thyme or rosemary for garnish

Instructions

  1. In a mixing glass or shaker, place 1/2 cup fresh blackberries. Using a muddler, press gently but firmly until the berries release their juice and start to break down, about 15-20 seconds. Avoid over-muddling to prevent bitterness.
  2. Add 2 oz (60 ml) gin and 3/4 oz (22 ml) freshly squeezed lemon juice to the muddled berries.
  3. Add 1/2 oz (15 ml) simple syrup to the mix. Taste and adjust sweetness if desired.
  4. Add ice to the shaker, filling halfway, and shake vigorously for about 15 seconds until well chilled and slightly frothy.
  5. Strain the mixture through a fine strainer into a highball glass filled with fresh ice to remove seeds and pulp.
  6. Top with 3 oz (90 ml) chilled soda water. Stir gently once with a bar spoon to combine without losing fizz.
  7. Garnish with 3-4 fresh blackberries and a lemon twist on the rim. Optionally, add a sprig of rosemary or thyme for aroma.

Notes

Use fresh lemon juice for best flavor. Avoid over-muddling blackberries to prevent bitterness from seeds. Add soda water after shaking to preserve fizz.
