A sweet-savory glazed turkey breast that’s quick, easy, and perfect for holidays or weeknight dinners. The brown sugar and bourbon glaze caramelizes into a sticky, glossy crust while keeping the meat incredibly juicy.

  • 1 boneless skinless turkey breast (2.5 to 3 pounds or 1.1 to 1.4 kg)
  • 2 tablespoons olive oil
  • 1 teaspoon fine sea salt
  • 1/2 teaspoon black pepper, freshly ground
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika (optional)
  • 1/2 cup packed brown sugar (100 g)
  • 1/4 cup unsalted butter (4 tablespoons or 57 g)
  • 3 tablespoons bourbon
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 375°F (190°C). Position the rack in the center. While it heats, take the turkey breast out of the refrigerator and let it sit at room temperature for 20 minutes.
  2. Pat the turkey breast completely dry with paper towels. Rub it all over with the olive oil.
  3. Mix the salt, pepper, garlic powder, onion powder, and smoked paprika in a small bowl. Sprinkle this seasoning mixture evenly over all sides of the turkey breast. Rub it in gently with your hands.
  4. Place the turkey breast on a wire rack set inside your roasting pan, or directly in the pan on a bed of vegetables. Roast for 30 minutes.
  5. While the turkey roasts, make the glaze. In a small saucepan over medium heat, combine the brown sugar, butter, bourbon, Dijon mustard, apple cider vinegar, cayenne (if using), and cinnamon. Stir constantly until the butter melts and the sugar dissolves, about 3 minutes. Let it simmer gently for 1 minute. Remove from heat.
  6. After 30 minutes, remove the turkey from the oven. Brush a generous layer of glaze all over the surface. Return to the oven.
  7. Baste every 15 minutes, brushing on more glaze each time. You’ll do this about 3 to 4 times total. If the top is browning too quickly, tent loosely with aluminum foil.
  8. Check for doneness. The turkey is ready when an instant-read thermometer inserted into the thickest part reaches 160°F (71°C). This usually takes 50 to 65 minutes total roasting time.
  9. Remove from the oven and let rest for 10 to 15 minutes. Cover loosely with foil to keep warm.
  10. Slice against the grain into 1/2-inch thick slices. Pour any pan juices over the top before serving.

Notes

Don’t skip drying the turkey breast—moisture prevents browning. Watch the glaze carefully as brown sugar burns quickly. Let the turkey rest before slicing to keep it juicy. For a non-alcoholic version, replace bourbon with apple cider and 1/2 teaspoon vanilla extract.
