Perfect Father’s Day Reverse-Sear Ribeye Recipe with Garlic Herb Butter

  • 1 thick-cut ribeye steak, about 1.5 to 2 inches thick (around 16 oz or 450 g)
  • Kosher or sea salt, for seasoning
  • Freshly cracked black pepper
  • 3 tbsp unsalted butter, softened
  • 3 cloves fresh garlic, minced
  • 1 tbsp chopped fresh parsley
  • 1 tsp chopped fresh rosemary
  • 1 tsp chopped fresh thyme
  • 1 tbsp olive oil, for searing
  • 1 tsp lemon zest (optional)

Instructions

  1. Preheat your oven to 275°F (135°C).
  2. Season the ribeye generously on both sides with kosher salt and cracked black pepper. Let it rest at room temperature for 20 minutes if possible.
  3. Place the steak on an oven-safe wire rack atop a rimmed baking sheet. Slide it into the oven and set a timer for 20 minutes.
  4. After 20 minutes, start checking the internal temperature with an instant-read meat thermometer. For medium-rare, aim for 120°F (49°C) before searing.
  5. While the steak is in the oven, prepare the garlic herb butter by mixing softened butter with minced garlic, chopped parsley, rosemary, thyme, and lemon zest (if using). Stir well and set aside at room temperature.
  6. When the steak reaches the target temperature, remove it from the oven.
  7. Heat a cast iron skillet over high heat and add the olive oil. Wait until it’s shimmering but not smoking.
  8. Sear the ribeye for about 1.5 to 2 minutes on each side until a deep, golden-brown crust forms. Also sear the edges by holding the steak with tongs.
  9. Remove the steak from the skillet and immediately top with a generous dollop of garlic herb butter.
  10. Let the steak rest for 5–10 minutes to allow juices to redistribute and the butter to melt over the meat.
  11. Slice against the grain and serve. Optionally, spoon some of the melted butter from the pan over the slices.

Notes

Use a meat thermometer to ensure perfect doneness. Rest the steak after searing to keep it juicy. If steak cooks too fast in the oven, lower the temperature. For dairy-free, substitute vegan butter and coconut or avocado oil. Avoid microwaving leftovers to preserve texture.
