A moist, luscious poke cake soaked in sweetened condensed milk, decorated with fresh blueberries and strawberries for a festive July 4th dessert.

  • 1 can (14 oz / 396 g) sweetened condensed milk
  • 2 cups heavy whipping cream, chilled
  • 3 tablespoons powdered sugar (adjust to taste)
  • 1 teaspoon pure vanilla extract
  • 1 cup fresh blueberries
  • 1 ½ cups fresh strawberries, sliced

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking pan or line with parchment paper.
  2. In a medium bowl, combine white cake mix with eggs, oil, and water as directed on the box. Beat with an electric mixer on medium speed for about 2 minutes until smooth.
  3. Pour batter evenly into prepared pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  4. Remove cake from oven and let cool for 10 minutes. Using a toothpick or skewer, poke holes about 1 inch apart all over the cake.
  5. Slowly pour the entire can of sweetened condensed milk evenly over the cake, allowing it to seep into the holes.
  6. Refrigerate the cake for at least 1 hour to let the milk soak completely.
  7. In a chilled bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form (3-5 minutes).
  8. Spread whipped cream evenly over the chilled cake.
  9. Arrange fresh blueberries in the shape of stars on one corner and sliced strawberries in horizontal stripes across the rest of the cake to mimic the American flag.
  10. Return the cake to the refrigerator for another 30 minutes to set the topping.
  11. Slice into squares and serve chilled.

Notes

Chill mixing bowl and beaters before whipping cream for better results. Pour sweetened condensed milk slowly and evenly to avoid soggy edges. Let cake cool 10 minutes before poking holes to prevent crumbling. Use fresh berries for best texture and appearance. Cake can be made a day ahead and chilled overnight for better flavor melding.
