  • 1 to cups granulated sugar (adjust based on peach sweetness)
  • 1 whole vanilla bean, split and scraped
  • 2 tablespoons lemon juice
  • ½ teaspoon ground cinnamon (optional)
  • ¼ cup water

Instructions

  1. Wash peaches thoroughly. Make shallow ‘X’ cuts at the base of each peach and blanch in boiling water for 30-60 seconds until skins loosen. Immediately plunge into ice water and peel off skins. Pit and chop peaches into roughly ½-inch pieces. (About 15 minutes)
  2. In a large heavy-bottomed saucepan, combine chopped peaches, sugar, lemon juice, and water. Scrape seeds and pulp from the vanilla bean pod into the pot, then add the pod itself. Stir well to combine. (About 5 minutes)
  3. Bring mixture to a gentle boil over medium heat, stirring frequently to prevent sticking. Reduce heat to low and simmer uncovered for 45-60 minutes, stirring every 5-10 minutes. Mash some chunks with the back of a spoon or blend lightly with an immersion blender for a smoother texture. Remove vanilla pod once thickened and aromatic.
  4. Test for doneness by placing a spoonful on a chilled plate; it should hold its shape without running.
  5. Ladle hot peach butter into sterilized glass jars, leaving ¼ inch headspace. Wipe rims clean, seal with lids, and process in a boiling water bath for 10 minutes. Let cool completely before labeling. (About 30 minutes)

If you forget to remove the vanilla pod early, remove it before jarring to avoid bitterness. Stir frequently to prevent scorching. Adjust sugar based on peach sweetness. Use fresh lemon juice for best flavor and color preservation. Blanch peaches to ease peeling and ensure smooth texture. For a smoother butter, blend with an immersion blender midway through cooking.
