  • 1 cup (240 ml) whole milk ricotta cheese
  • 2 tablespoons (30 ml) heavy cream
  • Pinch of sea salt
  • 3 oz (85 g) fresh honeycomb piece
  • 45 ripe figs, halved
  • 1 cup (150 g) seedless grapes
  • 1 cup (150 g) cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • 1/2 cup (60 g) toasted almonds or walnuts
  • Fresh herbs like basil or thyme (a few sprigs)
  • 12 cups (120240 g) crackers or baguette slices

Instructions

  1. Place 1 cup (240 ml) of whole milk ricotta and 2 tablespoons (30 ml) of heavy cream into a mixing bowl. Add a pinch of sea salt.
  2. Using an electric mixer on medium speed, whip the mixture for about 2 to 3 minutes until light, fluffy, and spreadable. If whipping by hand, whisk vigorously for 5 minutes until airy like a soft mousse.
  3. Rinse figs, grapes, cherry tomatoes, and cucumber. Slice figs in half, halve cherry tomatoes, slice cucumber into thin rounds, and keep grapes whole. Arrange on a plate or small bowls.
  4. Toast 1/2 cup (60 g) almonds or walnuts in a dry skillet over medium heat for 3 to 5 minutes until fragrant and slightly golden. Stir frequently and let cool.
  5. Cut baguette into thin slices about 1/2 inch thick and toast lightly if desired. Arrange crackers or bread slices on the serving board.
  6. Spoon whipped ricotta into a small bowl or directly onto the board as a central mound. Place honeycomb nearby or in a small ramekin.
  7. Arrange fruits, veggies, nuts, and crackers around the ricotta in a balanced, colorful way. Garnish with fresh basil or thyme sprigs.
  8. Just before serving, drizzle honeycomb over whipped ricotta and fruits if desired. Serve immediately or cover and chill for up to 2 hours.

Notes

Use whole milk ricotta for best whipping results. Toast nuts to enhance flavor. Handle honeycomb gently with a small offset spatula or butter knife. Assemble just before serving for freshness. For gluten-free, use gluten-free crackers or veggies. For dairy-free, substitute ricotta with almond or cashew-based soft cheese.
