Instructions

  1. Preheat your oven to 350°F. Spray your donut pan with non-stick cooking spray.
  2. Reduce the apple cider: Pour the 1 cup of apple cider into a small saucepan and bring it to a simmer over medium heat. Let it simmer until it reduces to about ¼ cup, about 8-10 minutes. Pour into a small bowl to cool slightly.
  3. Mix the dry ingredients: In a medium bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
  4. Mix the wet ingredients: In a large bowl, whisk together the egg, melted butter, vanilla extract, and the reduced apple cider until combined and smooth.
  5. Combine wet and dry ingredients: Pour the dry ingredients into the wet ingredients and stir with a spatula until just combined. A few lumps are okay.
  6. Fill the donut pan: Transfer the batter to a piping bag or a zip-top bag with the corner snipped off. Pipe the batter into the prepared donut cavities, filling each about ⅔ full.
  7. Bake for 10-12 minutes, until golden brown around the edges and a toothpick inserted into the thickest part comes out clean.

  9. Make the cinnamon sugar coating: Mix the ½ cup granulated sugar and 1 ½ tablespoons cinnamon in a shallow bowl. Melt the ¼ cup butter in another small bowl.
  10. Coat the donuts: While the donuts are still warm, brush each one with melted butter, then dip into the cinnamon sugar mixture, turning to coat all sides.
