Instructions

  1. Prepare the bruschetta topping: In a medium bowl, combine diced tomatoes, minced basil, minced garlic, extra virgin olive oil, salt, and pepper. Add balsamic vinegar if desired. Stir gently and let sit while preparing bread.
  2. Slice the rustic baguette or ciabatta into ½-inch thick slices. Brush each slice lightly with olive oil on both sides.
  3. Toast the bread slices on a grill pan or under an oven broiler until golden and crisp, about 2-3 minutes per side. Watch closely to prevent burning.
  4. Arrange toasted bread slices on a large serving board. Spoon the tomato topping generously over each slice just before serving.
  5. Arrange optional items like marinated olives, fresh mozzarella, cured meats, and roasted veggies around the bruschetta to create an inviting spread.
  6. Drizzle a little more olive oil over the assembled bruschetta and scatter whole basil leaves for garnish. Serve immediately.

Notes

Prepare the tomato topping up to 24 hours ahead and refrigerate. Toast bread just before serving to keep it crisp. Use ripe but firm tomatoes to avoid watery topping. Mince garlic finely and mix well. For gluten-free option, use gluten-free bread. For vegan option, omit or replace mozzarella with plant-based cheese.
