  • 1 cup (240ml) cold water

  • 2 tablespoons Tajin seasoning for rimming glasses
  • Lime wedges for rimming glasses
  • Optional: splash of simple syrup or maple syrup for extra sweetness

Instructions

  1. Rub a lime wedge around the rim of each glass, then dip the rims into a shallow plate with Tajin seasoning. Set aside.
  2. Squeeze fresh lemons until you have 1/2 cup (120ml) of juice. Strain out seeds.
  3. In a high-speed blender, combine 2 cups frozen strawberries, 1/2 cup fresh lemon juice, 1 cup cold water, 1/4 cup granulated sugar, and 1 cup ice cubes.
  4. Blend on high for 1-2 minutes until the mixture is icy and smooth but thick enough to sip through a straw. Stop and scrape down the sides if needed. Adjust consistency by adding more water or ice as desired.
  5. Taste and adjust sweetness by adding simple syrup or honey if desired, then blend again for 10 seconds.
  6. Pour the slushie into the prepared glasses, keeping the Tajin rim intact, and serve immediately.

Use fresh lemon juice for best flavor. Adjust ice-to-fruit ratio for desired texture. Serve immediately to maintain icy texture. If slushie softens, blend again briefly to refresh. Tajin rim adds a spicy, tangy contrast—don’t skip it. For sugar-free version, use natural sweeteners like stevia or monk fruit. Can substitute frozen raspberries or blackberries for strawberries. If no Tajin, use chili powder mixed with lime zest and salt.
