Refreshing Watermelon Popsicles

These healthy and easy watermelon popsicles combine fresh watermelon, creamy coconut milk, and a zing of lime zest for a refreshing summer treat that’s quick to prepare and delicious.

Ingredients

  • 4 cups diced and seeded fresh watermelon (about 600g)
  • 1 cup full-fat canned coconut milk
  • Zest of 1 lime (about 1 teaspoon)
  • 2 tablespoons fresh lime juice
  • 1 to 2 tablespoons honey or maple syrup (optional)
  • A pinch of sea salt

Instructions

  1. Dice 4 cups of fresh watermelon into chunks, removing seeds carefully.
  2. Zest one lime to get about 1 teaspoon of zest, then squeeze 2 tablespoons of fresh lime juice and set aside.
  3. In a blender, combine watermelon chunks, coconut milk, lime zest, lime juice, and a pinch of sea salt. Add honey or maple syrup if desired.
  4. Blend on high speed for about 1 minute until smooth and slightly creamy.
  5. Taste and adjust sweetness or lime juice if needed, blending again briefly if adjustments are made.
  6. Pour the mixture into popsicle molds, leaving a small gap at the top. Insert sticks and cover if molds have lids.
  7. Freeze molds upright for at least 6 hours or overnight until firm.
  8. To unmold, dip molds briefly in warm water for 10-15 seconds and gently pull on sticks before serving.

Notes

Use ripe watermelon for natural sweetness. Avoid over-blending to prevent coconut milk separation. Adjust sweetness based on watermelon ripeness. Dip molds in warm water before unmolding to release popsicles easily. For adult version, add 1 tablespoon of rum or tequila before freezing. Store popsicles in airtight container to prevent freezer burn.
