Sparkling Watermelon Mint Cocktail

A light, bubbly, and refreshing cocktail featuring juicy watermelon, fresh mint, and sparkling water, perfect for summer and Fourth of July celebrations.

Ingredients

  • 4 cups watermelon, cubed and chilled (seedless preferred)
  • 1015 fresh mint leaves, washed and gently bruised
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 to 2 tablespoons sugar or simple syrup (optional, adjust to taste)
  • 2 cups sparkling water (about 16 fl oz), chilled
  • Ice cubes, enough to fill glasses
  • Optional: 1/2 cup white rum or vodka for an adult version

Instructions

  1. Place the watermelon cubes into a blender or food processor and blend on high speed until smooth, about 30 seconds.
  2. Pour the blended watermelon through a fine mesh strainer into a large bowl or pitcher, pressing the pulp to extract as much juice as possible. Discard solids or save for smoothies.
  3. Add 10-15 fresh mint leaves to the pitcher and gently muddle with a muddler or the back of a wooden spoon to release oils without pulverizing.
  4. Pour in 2 tablespoons fresh lime juice and 1-2 tablespoons sugar or simple syrup. Stir gently to combine and adjust sweetness as needed.
  5. Slowly add 2 cups chilled sparkling water to the pitcher and stir gently to maintain bubbles. If using alcohol, add 1/2 cup rum or vodka now and stir carefully.
  6. Fill serving glasses with ice cubes and pour the cocktail over the ice.
  7. Garnish each glass with a sprig of fresh mint and a small watermelon wedge. Serve immediately.

Notes

Do not over-muddle the mint to avoid bitterness. Use ripe watermelon to reduce added sugar. Strain the juice for smoothness. Keep all ingredients and equipment chilled to maintain fizz. Add sparkling water just before serving to preserve bubbles. For a frosty version, freeze watermelon cubes and use instead of ice.
