A romantic, no-fuss charcuterie board for two featuring creamy brie, aged gouda, prosciutto, salami, warm honey with a kick, and toasted nuts. Ready in 15 minutes, it’s the perfect stress-free Valentine’s Day meal.

Ingredients

  • 4 oz Brie cheese
  • 4 oz Aged Gouda
  • 4 slices Prosciutto
  • 4 oz Genoa Salami
  • 1/3 cup Honey
  • 1/2 cup Marcona almonds
  • 1/4 cup shelled pistachios
  • Pinch of flaky sea salt
  • Pinch of red pepper flakes
  • 1 small apple (Honeycrisp or Fuji)
  • 1/2 cup dried figs
  • 1/4 cup cornichons
  • Small handful of fresh rosemary sprigs
  • Crackers or baguette slices

Instructions

  1. Take the cheese out of the fridge 5 minutes before you start. Unwrap brie and gouda and let them sit on the counter.
  2. Toast the nuts: Place Marcona almonds and pistachios in a dry skillet over medium heat. Shake the pan every 30 seconds for 3-4 minutes until golden and fragrant. Transfer to a plate to cool.
  3. Warm the honey: In a small saucepan over low heat, add honey, a pinch of flaky sea salt, and a pinch of red pepper flakes. Stir gently for 1-2 minutes until runny and salt dissolves. Do not boil. Pour into a small ramekin.
  4. Prep the fruits and pickles: Slice apple into thin wedges (about 8 slices) and toss with lemon juice. Halve dried figs if large. Drain cornichons and pat dry.
  5. Arrange the meats: Fold prosciutto into loose ribbons and place in a pile on one side of the board. Fold salami slices in half, then in half again to form triangles, and arrange next to prosciutto.
  6. Place the cheese: Put the whole brie wedge on the board, rind side up. Slice gouda into thin triangles and fan them out in a row.
  7. Add the accompaniments: Scatter apple slices, dried figs, and cornichons around the board, filling gaps. Place the ramekin of warm honey in the center or near the brie. Sprinkle toasted nuts in small clusters.
  8. Garnish and serve: Tuck fresh rosemary sprigs around the board for color. Arrange crackers or bread slices in a basket or on the side. Serve immediately while honey is warm.

Notes

Let cheese sit at room temperature for 15 minutes before serving for best flavor. Don’t over-toast nuts as they continue to cook after removal from heat. Slice apple right before serving to prevent browning. The honey is the hero—don’t skip warming it with salt and red pepper flakes.
